Regina white
Varietal composition: Pinela , Rebula and Chardonnay.
The color is light yellow with gold shades. Characterized by aromas of tree-ripened local peach and background hues of common centaury flower blossoms .A medium-bodied wine full of notes of ripe peaches. It acts warm, with a hint minerality. The finish is medium long, very amiable.
Food pairings: fish and hot appetizers, risottos, pastas…
Chardonnay
This French vintage wine grape variety found its way to this part of the Vipava valley, where the soil is suitable for its growing. Skilled winemakers made it into a wine that fascinates both the wine admirers and connoisseurs. The character of this vigorous and full-bodied wine is slightly exotic. Regardless of the vintage, the wine keeps the vivid shades of straw yellow. It boasts with a promising subtle and fragrant bouquet. The smell of the wine reminds us of dry bananas, while we can sense vanilla and caramel in its tertiary aromas. The flavour of this Chardonnay is, without a doubt, very rich with a multitude of senses. It sports a subtle taste of wood and coconut, sensed long after the glass has been emptied.
Pinela
One of the oldest Vipava wine grape varieties, more feminine than Zelen wine, but no less interesting, fresh and popular. And it has been so for centuries. The wine boasts with gentle bright green-yellow colour, intense bouquet reminiscent of various flowers and fruits, especially citrus fruits and peaches. The flavour is rounded off with pleasant and fresh acids, bringing together other characteristics of this noble wine and making it harmonious. Because the wine is easy-drinking, it goes well with home-made prosciutto and other meat dishes, fish and seafood dishes.
Zelen
This indigenous Vipava wine is of bright green-yellow colour, hence its name (Zelen means green). It is an aromatic, white and lively wine. Due to its intense aroma, it used to be dubbed “fragrance”. The vine-friendly cultivation emphasizes its fragrant character. The bouquet is both soft and bold at the same time, pleasant and stunningly aromatic. Its distinguishable flavour is an experience of elegance, richness and harmony. Together with the Pinela wine, they represent a traditional wine pair, the wine-growing Vipava valley cannot do without. The wine goes well with simple local (Vipava) cuisine dishes and other light Mediterranean dishes, potato dishes and home-made pasta dishes.
Rebula
This old varietal, unjustly neglected in the past decades, gives an excellent wine of bright green-yellow colour, ideal to be served as an aperitif. Its freshness is pleasant and elegant, while its bouquet is reminiscent of flowers and fresh fruits. Usually we drink it in a year or two, but harvests in the last decade prove that, if properly cultivated (with as little interference as possible), it is possible to make an outstanding Rebula wine, completely different from those made several decades ago. The flavour of the wine is soft and elegant, appealing and special at the same time. Its freshness is harmonious; therefore, it pairs well with local cuisine dishes and white meat dishes, pasta, potatoes and other light side dishes.
Sauvignon
SAUVIGNON BLANC is a unique dry white wine of light straw colour. The characteristic bouquet of this wine variety, in which basil scent prevails, is mature and pleasant.
Grey pinot
Grey pinot, this elegant dry white wine is famous for its drinkability and fruity freshness, unobtrusive bouquet and harmonious taste that gives perceptions of ripe apples.
Yellow muscat
Is an aromatic semi-dry wine of bright yellowish green color, which enchants connoisseurs and lovers. It comes from the location of Špegla and directly embodies the loving care that the winegrower dedicates to the vine, giving admiration to every bottle of wine. A pleasant and long-lasting delicate bouquet, in which Chinese lychees, pineapple and mango cannot be hidden, it continues its journey in a noble, varietal characteristic taste. It goes well with slightly sweet desserts and delicate biscuits.
Varietal composition: Merlot, Barbera
The color is bright red with ruby shades. Distinct varietal characteristics with perceptions of very ripe blackberries, in the background sage. Regina is medium in flavor with velvety tannins reminiscent of Mediterranean herbs.
Food pairing: matured beef or marinated capon (young rooster)
Barbera
A red wine grape variety, characteristic of the Vipava valley, produces excellent wines with typical freshness. Its appealing dark ruby red colour and its bouquet signify the boldness of the wine, accentuated by its flavour. Therefore, it is no coincidence that the wine is so popular. Due to its harmonious character, the wine goes well with various dishes, especially meat dishes and grilled food. Hence, it is a wine that is especially suitable for summertime.
Cabernet Sauvignon
It is a premium dry red wine of appealing ruby colour with shades of cherry red that exhibits its good qualities in the bouquet. This harmonious and easy-drinking Vipava wine is a fruity and fresh wine with the velvet tannin structure. It is a good companion for various dishes, especially meat dishes. Undoubtedly, it is a wine that can be drunk today or stored in a cellar for several years.
Merlot
This big wine seduces us with its ruby red colour with pomegranate shades. Its aroma, suggestive of flowers and fruits, is rich, bold and distinct. Regardless of the vintage, the wine is still very expressive. When we taste the wine, the aromas reminiscent of jam, candied fruits, bitter almonds and dates, spices, wood and fine tobacco do not disappoint. Its velvety tannins do not stand out in any way. It is a wine with a high level of extract, mineral flavour and a lingering aftertaste. Moreover, this dry and warm wine with perceptible and pleasant acid feeling offers a delightful experience, especially to wine connoisseurs.
Pinot Noir
This premium dry red wine enchants all those who prefer lighter red wines. It is undoubtedly one of the best Pinot noir wines in the Vipava valley. Its bouquet and aroma, as well as its flavour of fresh wild fruits win the hearts of many wine lovers. In the Zaloščan wine cellar, the wine grape variety, otherwise known for its moodiness, exhibits its harmonious character, which goes well with typical Vipava valley dishes as well as other lighter meat dishes.
Merlot Barrique
Merlot Barrique is also one of the most elegant wines in the cellar. It has a charming cherry red colour with scarlet reflection and an intense, rich aroma of fruits and spices. Its bouquet is reminiscent of wild fruits, ripe plums and roses. It is a dry, warm, opulent and harmonious wine. A variety of tertiary aromas, typical of the aging wooden barrels, can be sensed. This vigorous and full-bodied wine has a high level of dry extract. Therefore, the experience of the wine will be much more pleasant if served with smoked dried-meat products.
